19CountyLineFebruary2012andstaffeventsintheCulinaryArtsx19diningroom.TheytookpartinFlavorsofForsyththepasttwoyearsandwonx1cBestDessertx1datbothevents.TheCulinaryArtsprogramworksinconjunctionwithandundertheleadershipofProS-tartanationwidetwo-yearprogramsponsoredbytheNationalRestaurantAssociationEducationFoundationNRAEF.ProStarthasmanyopportunitiesthatunitehighschoolstudentswiththeindustryanddevelopstudentsintotomorrowx19srestaurantandfood-serviceleaders.AtthestateleveltheprogramworkswiththeHospitalityEducationFoundationofGeorgia.Theseorganizationsprovidethestudentswithnumerouseducationalexperiencesin-cludingparticipationincompetitions.EveryyearstudentsfromtheCulinaryArtsprogramparticipateintheNationalProStartInvita-tionalpresentedbytheNRAEF.TheInvitationaliscomposedoftwocompetitionsculinaryandmanagement.InMarch2011studentsfromtheprogramenteredthestatelevelcompetitionandtookpartinboththeculinaryandmanagementcompetitions.Theywonx1drstplaceinbothdivisionswhichisthex1drsttimethatanyschoolhaswonx1drstplaceinbothcompetitions.Thetaskrequiredforthemanagementcompetitionentailedcreatingabusinessplantostartarestaurant.Therequiredcomponentsofthebusinessplanweretocreateaconceptforarestaurantax1eoorplanoftheinterioradescriptionofthedcoranorganizationalchartoftherestaurantx19sstaffandtocreateacompletemenuincludingallrecipes.Theculinarycompetitionisdividedintotwopartsx14a30-minuteknifeskillsdemonstrationmakingcutsthatwillbeusedinthecookingandpreparinganentiremealfromappetizertodessertinonly60minutes.Theentiremealmustbecookedusingonlytwogasburners.Thecompletethree-coursemealx14appetizerentrewithastarchandvegetableanddessertx14ispre-paredbya4-memberteamandanalternatewhomuststandbyandmaynotactivelyparticipateunlessneededtox1dllinforateammember.Theteamisobservedandratedbyjudgesfromleadingcollegesanduniversitiesonthefollowingsafetyandsanitationteamworkx1eavorprox1dlepresentationprofessionalismandthecostingandrecipebooktheyprepareinadvance.Afterwinningx1drstplaceatthestatelevelcompetitiontheteamrepresentingSFHSwentontocompeteatthenationallevelandplacedthirdamongover300otherstudentsrepresenting41states.TheProStartcompetitionatthestatelevelisunderthedirectionofGeorgiax19sProStartExecutiveDirectorLeeGray.Sheisalsoanactiveparticipantinprovidingeducationalopportunitiesandhands-onexperienceforthestudentsoftheCulinaryArtsprogram.AsDawnsaysx1cLeeisthereasonwearesosuccessful.Shehasraisedthebarfortheentireorganizationandindoingsoshehaselevatedtheopportunitiesthatareprovidedforourstudentsandtheteachers.x1dx1cTheprogramwithallitsbenex1dtsforthosestudentspreparingforacareerintheres-taurantorhotelindustryisnotjustaboutthepathwaytoacareerinculinaryartsx1dsaidDawn.x1cWhatevertheirfutureholdseachofthesestudentswillneedtopurchasefoodunderstandnutritionalvaluesforahealthylifestyleandmostwillpreparemealsforthemselvesandothers.Graduatesoftheprogramhavegoneontosomeofthebestculinaryprogramsintheworldandmanystudentsnowworkatsomeofthex1dnestres-taurantsandhotelsinthecountry.IamveryproudofthembutIamalsoproudofthestudentswhogoinadifferentdirectionandusewhattheylearnedtoenjoycookingeathealthyandgiveofthemselvestoothers.x1dTheCulinaryArtsprogramatSouthForsythHighSchoolisauniqueopportunityforthestudentstolearnabouteveryfacetofculi-naryartsfromfoodpreparationtoservingtocleaningupandeverythinginbetween.Itisarecipeforsuccess.x1cIamconstantlyover-whelmedatthenumberofchefswhovolunteertheirtimeandtalentstothestudentsoftheprogramx1dsaidDawn.
